황복 작업과정

황복회 필렛 작업 (총 9마리 사용)
위생 시식 후 최종 검수 및 황복 맑은탕 제공
이 날 작업은 황복15kg 작업 이였는데, 마리 수로는 대략 22마리 정도 작업을 했습니다. 매장 수족관이 없어서 이날 들어온 황복은 모두 작업을 했어야 했습니다. 작업현장은 황복작업과 동시에 촬영으로 많이 어수선 했고, 작업 중 질문도 받아가면서 작업을 했습니다.
제독작업은 1차, 2차 검수하면서 복어 기본육수도 동시에 만들어 가면서 작업을 했습니다. 이날 황복회 필렛으로는 총 9마리를 사용을 했고, 머리와 뼈는 맑은탕으로 만들어서 위생시식으로 3차 검수를 하고 황복 맑은탕을 제공 했습니다.
